Making Enchiladas




Yummy Green Enchiladas, one of my families faves. So easy to make and not much cooking involved. Mix the sauce,chop the onion, shred the cheese, and cook the tortilla. That's it!!!!You stack them like pancakes. Here are some pics...Lots of pics! First, you take the soup and chilis, and blend them in the blender. Warm the blended mix in a sauce pan. Chop your onion(optional) and grate your cheese, and set aside. Once your sauce is warmed, you can cook your tortillas. Use a ladel or big spoon, and put some sauce on your plate, then a bit of cheese and onion, then a cooked tortilla. Repeat. Sauce, cheese, onion, tortilla. I usually will stack 4 tortillas, and that's it....They are yummy and filling. You can add jalepenos in the blender if you want them spicy. Hope you enjoy! One thing, The big can of chilis and the family size can of soup, feeds my family of 4. I would use 2 cans of each if you need to feed more than that. Rice, beans and a salad top off the meal.

Haven't posted for a bit...Sorry!!

I have been a little busy the last ten days or so...With the weather off and on, school,helping my sis, trying to catch up on my other blog, I think it is safe to say that I have completely overdid it this time. Oh well,tomorrow is another day!!! My little sis had her DR. appt. this week, and her father-in-law had open heart surgery (everything went well). The doc says everything looks fine, but she does have gestational diabetes. They are getting a nutrishionist, and go from there. Other news...My son has lost his second tooth, and is so very proud!!He says he can't wait to lose all of them...OK slow down there little guy. Don't grow up too fast. Around the block we go!

We are feeling better today, after getting over a cold. It has been icky for the last few days, so we have been inside. Today the sun shined for just a bit, and we took advantage of it. Joey wanted to ride his new bike he got from sissy for Christmas around the block. I could hardly keep up with him.We went around two times, and will hopefully build it up to 5 soon. If so I think that would be a mile a day. Gotta keep to my goal. As soon as we got out of our gate, he was ready to race and shot around our corner. Our house is like a big "L" and it sits on two lots, so as he went around the corner to the front of our house I was already running. This little boy keeps me on my toes!

New Year...New Blog

I think I may be a little crazy to add more work for myself...But anyway. I have started a journal blog. Nothing spectacular, just a little writing of my day. I'm thinking this may also help me with remembering certain things, you know as we get older, our memories start to go. I need all the help I can get. There probably will not be many pictures, that will be on my original blog, but there will be daily writings. Wish me luck!!!

Happy New Year!!!

With the new year here, it is always time for our resolutions. I have a few and want to really work towards actually achieving them. I think if we make our resolutions not so out of reach, we will find them easier to fulfill. My first resolution is to take better care of myself (eating right,exercise) The whole Mind, Body and Spirit. Second, I want to really work harder on my books (I am working on 3). I want to set better goals for myself that way I don't get in a hurry and don't become overwhelmed,thus better writing.  I also need to slow down a little and not try to get everything done in one day. Do one thing at a time, not the usual trying to do 10 things at once, not good on the memory. Good luck everyone, and have the best 2010 ever!
